Michelin is an old bittersweet cider apple with its origin going back to the 1800’s. The apples are small, pale green and maturing to yellow with a slight flush when exposed to sun. This cider can stand alone, but benefits from blending. High sugar and tannin content is balanced by a low malic acid content. The apples are not typically stored and are used immediately, but will keep in cold storage for up to a month, best at two weeks. Slight berry aroma, tastes like cooked apple. The Michelin apple trees produce a sweet, mildly astringent juice, and a good, medium bittersweet cider.
